Gluten-Free Moringa Pancakes

Makes 6 pancakes

Ingredients:

  • 1 tsp Moringaga powder
  • 1 cup gluten-free flour
  • 1 cup plant-based milk
  • 1 tbsp melted coconut oil
  • 1 banana, mashed
  • 2 tsp baking powder
  • 1 tbsp honey
  • maple syrup, fresh berries and desiccated coconut as toppings

Method:

Add the dry ingredients to a bowl and mix well. Add the coconut oil, banana, milk and honey to the dry ingredients and whisk until smooth.

In a frying pan over medium heat, fry the pancakes in a little coconut oil until lightly golden on both sides.

Serve pancakes with maple syrup, fresh berries and desiccated coconut and sprinkle some moringa powder on top.
